Pistachio Burgers

Pistachio Burgers are very flavorful and fun!

1 cup finely chopped pistachios
2 cups coarsely grated zucchini
2 (15-ounce) cans red kidney beans, rinsed, drained, and mashed
1/2 cup freshly grated Romano cheese
1/2 cup dry bread crumbs
1 egg
1 teaspoon freshly ground black pepper
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/4 teaspoon salt
1 tablespoon extra-virgin olive oil
1 tablespoon unflavored rice vinegar

1. add all ingredients to a food processor and mix until homogeneous
2. grill (we usually use our George Foreman)
